Kid-friendly recipes

I've discovered a couple of recipes that the kids actually enjoy. They can even help, if you don't mind cleaning up afterwards. I am imprecise about amounts of ingredients because I tend to eyeball them rather than measure them, but the nature of these two recipes is that you can always add more coating material if you need it.
"Chicken Nuggets"
2-3 chicken breasts, cut into 1-2 inch pieces
flour
eggs, beaten
bread crumbs, or cornflake crumbs, or even cornmeal -- add salt and pepper to taste
Dredge chicken pieces in flour. Dip dredged chicken in egg, letting excess egg drip off. Roll eggy chicken in bread crumbs. Cook in a hot oiled pan until golden brown on both sides. Serve with liberal amounts of ketchup.
"Fish Sticks"
2-3 catfish fillets, cut into 1/2-inch wide slices. (Probably any firm white fish will work.)
1 cup flour
1 cup water
1 Tbsp Old Bay seasoning
Mix together flour, water, and Old Bay. Dip fish pieces in batter. Cook in a hot oiled pan until golden brown on both sides. Serve with liberal amounts of ketchup.
Both recipes give much tastier version of the frozen pre-packaged varieties, but I will admit to resorting to frozen pre-packaged stuff with the excuse of "Busy Working Mother".
